Food Dryers or dehydration—the oldest method of food preservation—is particularly successful in the hot, dry climates found in much of New Mexico. Quite simply, drying removes moisture from food, and moisture is necessary for the bacterial growth that eventually causes spoilage.
Food dryers is adjustable and can process fruits, vegetables, herbs, or meat for any business. To improve the quality of the end product we take into consideration production setting, the construction materials (mostly stainless steel), moisture content, size, shape and quality of the final word dried product, and energy consumption pattern. For instance, proper success of dehydration requires a slow and gradual heat source confirming inside-outward drying of food. The colors will stay while drying. These foods should be blanched, sometimes with preservatives for added shelf life. However, certain fruits such as, for example, berries, are not subjected before dehydrating. Drying is an inexact science. The time for adequate dehydration depends on various factors such as size of food pieces, relative moisture contents in food and the chosen method.

This way food can be sun-dried naturally with or without a solar drier, using an ordinary gas or electric oven, or by means of a conveyable electrical drier. Thermostat operated dehydrators are not influenced by atmospheric conditions and give better control over product quality compared to sun-drying. Ears of corn can be air dried on clotheslines, which is okay.
